1-High Tea Masala Fish:




Ingredients:



  • Fish fillet                                         1/2 kg
  • Reined flour (sieved)                       1/2 cup 
  • Eggs                                                2
  • Lemon Juice                                   2 tbsp
  • Onion (finely cut)                           1
  • Ginger/ garlic paste                       1 tbsp
  • Green Chillies (finely cut)               3
  • Fresh coriander (finely cut)             2 tbsp
  • Fed Chilli Powder                           1 tbsp
  • Fed chillies (crushed)                       1 tbsp
  • Rice Flour                                        2 tbsp
  • Salt                                                    to taste
  • Oil                                                     for frying
  • Lettuce leaves, tomatoes                  for decoration

Method:



  • Cut fish fillet into big pieces; marinate fish with salt and lemon juice; keep aside.
  • Mix all ingredients in a bowl except oil to make better.
  • Heat oil in a frying pan; coat each piece with batter; fry golden from both sides and dish out.
  • Decorate with lettuce and tomatoes ; serve.

2-Vegetables Rolls: 




Ingredients:


  • Roll strips                                         as required
  • Capsicum                                         1/2
  • Carrot                                              1/2 head 
  • Cabbage                                           1/4 head   
  • Green Chillies                                    3
  • Spring onoin                                      1stalk
  • Egg (beaten)                                      1/2
  • Refined  flour                                     1 tbsp
  • Soya sauce                                        1 tbsp
  • Worcestershire sauce                         1 tbsp
  • Red Chillies (crushed)                        1 tsp
  • White sesame seeds (fried)                 to taste
  • Salt                                                    to taste
  • Oil                                                     for frying
  • Lettuce                                              for garnishing

Method:


  • Beat together eggs and flour.
  • Cut green chillies, spring onion, cabbage, carrot and capsicum finely.
  • Brush oil on frying pan; fry vegetables, soya sauce and Worcestershire sauce for few minutes.
  • Add red chillies and salt; remove from flame.
  • When cooled, place some vegetables on one side of roll strip; brush edges of strip with egg batter and roll  tightly.
  • Sprinkle sesame seeds on both ends.
  • Repeat process and make more rolls.
  • Heat oil in a wok; fry rolls golden; dish out.
  • Decorate with lettuce; serve.

3-Creamy Pasta Beef: 

 Ingredients:


  • Undercut (finely cut lengthwise)                  1/2 kg
  • Pasta (boiled)                                              150 grams
  • Button mushrooms(finely cut)                      1/2 cup
  • Mustard paste                                              1 tsp
  • Garlic Paste                                                 1 tbsp
  • Fruit vinegar                                               1 tbsp
  • Fresh cream                                                 200 grams
  • Black pepper powder                                   1/2 tsp
  • Parsley( chopped)                                        1/4 bunch
  • Capsicum (cut lengthwise)                           1
  • Basil leaves(chopped)                                   1/2 tsp
  • Oregano                                                        1/2 tsp
  • Salt                                                                To taste
  • Butter                                                            2 tbsp
  • Oil                                                                  2 tbsp
  • Lettuce, cucumber, tomatoes                         For garnishing

Method:

  • Heat butter and oil in a wok; fry ginger/garlic.  
  • Add undercut; cook for 2 minutes, and oregano and basil.
  • Cook until undercut changes color.
  • Add capsicum, mushrooms and mustard paste, parsley, black pepper, vinegar and salt; cook for 5 minutes.
  • Add cream and pasta; dish out.
  • Decorate with lettuce, cucumber and tomatoes.

4-Red Masala Mutton:
Ingredients:

  • Muttom pieces                          1/2 kg
  • Bay leaf                                     1
  • Lemons                                      3
  • Green chillies                             4
  • Black peppercorns                      4 
  • Garlic                                          6 cloves
  • Round, dried, red chillies             8
  • Ginger                                          1 inch piece
  • Cumin seeds                                  1 tsp
  • Coriander seeds  (crushed)            1 tbsp
  • Fresh coriander   (chopped)            1 bunch
  • Water                                               2 cups
  • Salt                                                   To taste
  • Oil                                                      1 cup

Method:

  • Mix all ingredients except oil, fresh coriander and lemon; cook.
  • When meat becomes tender, remove; blend masala in a blender.
  • Heat oil in a work ; fry mutton; add blended masala and lemon juice; fry till oil seprates.
  • Add fresh coriander; leave or dum.

5-Ginger Chops:  


 Ingredients:


  • Muuton chops                          1/2 kg
  • Ginger paste                           2 tbsp
  • Yogurt (whipped)                    1 cup
  • Lemons                                    4
  • Black peppercorns(crushed)   1 tsp
  • Cumin seeds                            1 tsp
  • Whole red chillies                     4
  • Salt                                           To taste
  • Oil                                             For frying
  • Fresh coriander                        For garnishing

Method:


  • Cook chops, yogurt, ginger and salt in a pot till dry.
  • Heat oil in a frying pan; fry chops; remove
  • Place chops in the pot again; add all ingredients; leave on dum.
  • Sprinkle coriander on it; serve.
